Baked Chicken Drumsticks with Lemon

Ingredients:

9 to 10 chicken drumsticks (about 3 pounds)

¼ cup soy sauce

¼ cup olive oil

4 cloves garlic, minced

Juice of one lemon

1/8 teaspoon ground black pepper

½ teaspoon salt

1 thumb ginger, crushed (optional)

3 tablespoons brown sugar (optional)

Instructions:

In a large bowl, mix soy sauce, olive oil, garlic, lemon juice, and ground black pepper (and optional – ginger, sugar). Add the drumsticks and toss thoroughly. Transfer and marinate in Ziplock plastic bag for at least 2 hours or marinate overnight in the refrigerator. Preheat oven to 450 degrees Fahrenheit. Take out from the Ziplock and transfer to a strainer the marinated chicken drumstick to drain excess liquid. Then, place and arrange the chicken drumsticks on a baking sheet lined with aluminum foil lightly sprayed with oil. Bake drumsticks, uncovered, for 50 minutes until golden brown and internal temperature is 165 to 170 degrees Fahrenheit, flipping the drumsticks halfway during bake time. Take out from the oven and transfer to serving dish. Enjoy.
