Baked Salmon and Baked Cauliflower
Side Dish – Baked Cauliflower
Ingredients:
1 head of 2 ½ pounds cauliflower, cut into florets
5 cloves garlic, thinly sliced
¾ teaspoon salt
¼ teaspoon ground black pepper
1/3 cup, plus 2 tablespoons olive oil
2 ½ tablespoons lemon juice
Grated Parmesan cheese as desired
Instructions:
Preheat oven to 450 degrees Fahrenheit. In a large bowl, toss the florets, garlic, salt and pepper. Add 1/3 cup olive oil. Mix very well. Add the lemon juice. Combine thoroughly. Prepare 2 baking dishes. Drizzle with about one tablespoon olive oil each dish. Drop and distribute evenly the florets mixture into the 2 baking dishes. Bake in the preheated oven for 15 minutes. After 15 minutes, turn the cauliflower florets and continue baking for another 10 minutes. After 10 minutes, broil for 2 minutes. Remove from the oven. Sprinkle the baked cauliflower with parmesan cheese as desired.
Baked Salmon
Ingredients:
2 pounds Salmon fillets, sliced in 6 pieces
9 tablespoons olive oil or as desired
2 teaspoons salt or as desired
1 teaspoon ground black pepper or as desired
Instructions:
Preheat oven to 375 degrees Fahrenheit. Pat dry the fillets. Lightly oil 2 baking dishes with about 1 1/5 tablespoons each dish. Arrange the fillets – 3 pieces per dish. Drizzle and rub with about one tablespoon of olive oil each fillet or as desired. Sprinkle and rub the fillets with salt and ground pepper as desired.
Bake fillets for 11 to 15 minutes or until the fish flakes easily with a fork
