Almond Flour Banana Bread
Ingredients:
2 overripe bananas
2 eggs
¼ cup honey
3 tablespoons olive oil
2 drops or ½ teaspoon vanilla
2 ½ cups almond flour
¾ teaspoon baking soda
½ teaspoon salt
¼ cup raisins
Instructions:
Preheat oven at 350 degrees Fahrenheit. Mash the overripe bananas. Set aside. In a bowl, beat 2 eggs. Add the honey. Mix well. Add the olive oil and vanilla. Mix again. Then add the mashed bananas. Mix very well. Set aside these wet ingredients mixture. In another bowl, mix the dry ingredients - sifted almond flour, baking soda and salt. Transfer the mixture of the wet ingredients into the bowl of the mixture of the dry ingredients. Add the raisins. Combine and mix thoroughly. Pour the mixture to a loaf baking dish lined with parchment paper. (Loaf pan can be used in lieu of the loaf baking dish.) Bake in the preheated oven for 40 minutes or until inserted toothpick comes out clean. Let the bread to cool completely before slicing it.
