Bistek

Ingredients:

2 pounds beef loin flap, thinly sliced

6 tablespoons soy sauce

Juice of 1 lemon

1/4 teaspoon ground black pepper

5 tablespoons cooking oil

3 large onions, sliced in rings

2 to 3 cups water

2 teaspoons sugar

Instructions:

In a large bowl, marinate beef in mixture of soy sauce, lemon, and ground black pepper for at least 2 hours, or marinate in the refrigerator overnight. Cover the bowl tightly with cling wrap. Heat a pan and add cooking oil. Stir fry the onions until half cooked, or soft if desired. Remove from the pan and set aside in a plate. Take the beef out of the marinade. Put in a strainer to drain excess liquid. Heat and add oil to the pan. Pan fry the beef for one minute each side. Add oil if needed. Put back all the fried beef into the pan. Add the marinade into the pan. Stir and add water. Let it boil. Cover and simmer. Stir and check occasionally to make sure the liquid does not dry up. Add water if needed. Cook until the beef becomes very tender, which may take about 40 minutes to one hour. Add sugar and fried onions when the beef is tender. Transfer the bistek into a serving dish. Eat with rice.
