Chicken Adobo
Ingredients:
2.5 pounds chicken drumsticks
1 head garlic, crushed
1/2 cup vinegar
1/8 cup soy sauce
1/2 cup water for the marinade
1/2 cup water as needed in cooking chicken adobo
3 dried bay leaves
1 teaspoon whole peppercorns
2 to 3 tablespoons cooking oil
2 to 3 teaspoons sugar
Instructions:
In a big bowl, marinate chicken in mixture of soy sauce, vinegar, water, garlic, bay leaves and peppercorns for one hour. Transfer the chicken with marinade to cooking pot. Boil and simmer for about 20 minutes until cooked, stirring occasionally. Using a tong, transfer the chicken to a plate. Pour the garlic marinade to a strainer resting in a bowl. Put and heat oil in the cooking pot and fry the drained garlic until light brown. Add the chicken. Fry the chicken for about one minute each side. Drop the bay leaves and peppercorns and pour back the marinade to the cooking pot. Add water if needed. Simmer for about 10 minutes. Stir. Add sugar. Mix. Cook for another minute. Transfer in a serving dish.
