Chicken Afritada

Instructions:

Heat the cooking pot. Put cooking oil. Sauté garlic for few seconds. Add and sauté onion until soft. Add the chicken and bay leaves. Stir. Add patis and ground pepper. Simmer for 5 minutes. Pour tomato sauce. Stir. Simmer in medium heat for 10 minutes. Pour half of the chicken broth. Stir. Cover and bring to boil. Cook in medium heat for 20 minutes until chicken is tender. Stir occasionally and add the remaining half of the chicken broth. Add carrots and potato wedges. Cook for 10 minutes. Add bell pepper and sweet peas. Cook for 5 minutes. Flavor with catchup. Add salt and pepper to taste. Cook for 1 minute.

2 tablespoons cooking oil

5 cloves garlic, minced

½ medium onion, chopped

3 pounds chicken thighs, cut into serving pieces

3 pieces bay leaves

1 tablespoon patis (fish sauce)

½ teaspoon black ground pepper

1 can tomato sauce, 8 ounces

1 can chicken broth, 14.5 ounces

1 potato, cut into wedges

1 carrot, cut into wedges

1 red bell pepper, cut into wedges

1 cup sweet green peas

3 tablespoons catchup

Salt and pepper to taste
