Ginataang Halo-Halo

Ingredients:

3 cans coconut milk, 13.5 ounces per can (Chaokoh brand)

2 cups water

3/4 cup white sugar

2 cups sweet potatoes (kamote), peeled and diced

2 cups purple yam, peeled and diced

2 cups taro roots (gabi), peeled and diced

3 small bananas (saging na saba), peeled and sliced

1 can 20 ounces jackfruit in syrup, (langka), 8 ounces drained and sliced

Instructions:

In a cooking pot, pour the coconut milk and water. Add the sugar, then stir well. Drop the sweet potatoes, purple yam, and taro roots. Turn on the heat. Stir slowly. Let boil and simmer for about 5 to 8 minutes, or until sweet potatoes, purple yam and taro are firm to the bite (al dente). Add the bananas and jackfruit, stir, then cook for 2 minutes. Turn off the heat and transfer immediately to a serving dish. Serve hot. Refrigerate leftover. Serve cold.
