Kale Coleslaw Salad

Ingredients:

½ cup mayonnaise

2 tablespoons white sugar

2 tablespoons lemon juice

1 tablespoon vinegar

¼ teaspoon salt

1/8 teaspoon ground black pepper

2 cups shredded cabbage

½ cup shredded kale

¼ cup shredded carrot

¼ cup raisin

Instructions:

In a bowl, whisk to mix well all the first 6 ingredients: mayonnaise, sugar, lemon juice, vinegar, salt and ground pepper, to make the dressing. Set aside. In a bigger bowl mix the cabbage, kale, carrot and raisins. Pour the dressing to the cabbage mixture and toss thoroughly. Transfer in a clean container with cover. Refrigerate. Serve cold as side dish. (It should last for 3 to 5 days in the refrigerator and would come in handy as side dish to baked salmon, baked pork ribs, embutido, and others.)
