Lumpiang Sariwa
Instructions for the Lumpiang Sariwa or Lumpiang Hubad::
Heat a wok. Put cooking oil, then sauté garlic until light brown. Take out and set aside half of the sautéed garlic. Add and sauté onion until soft. Add ground pork and cook covered for 15 to 20 minutes, stirring occasionally. Add salt and ground black pepper. Add water. Simmer and cook thoroughly over low to medium heat. Add the singkamas (jicama), toss, and cook for 2 minutes. Add kamote (sweet potato). Toss and pour a little amount of water. Toss and cook covered for 2 minutes. Add the carrot and toss. Cover and continue cooking for 1 to 2 minutes. Add the green beans, toss, cook covered for 1 minute. Add the cabbage and kintsay (Chinese celery). Toss and cook for 1 to 2 minutes. Make sure not to overcook the vegetables. Turn off the heat. Add brown sugar. Mix well. Add ¾ cup ground peanut, set aside the remaining ¼ cup. Add chicharron. Toss thoroughly. Remove from wok and transfer to serving dish and set aside.
Ingredients for the Lumpiang Sariwa or Lumpiang Hubad:
3 tablespoons cooking oil
1 head garlic, minced
1/2 cup chopped onion
1 pound ground pork
1 1/2 teaspoons salt
1/8 ground black pepper
1 cup water
1 piece singkamas (jicama), sliced into strips (about 5 cups)
1 cup sliced-into-strips carrot
2 cups sliced-into-strips kamote (sweet potato)
2 cups thinly sliced green beans
4 cups shredded cabbage
1 cup chopped kintsay (Chinese celery)
1 cup ground peanut
1 cup ground chicharron (pork rinds)
3/4 cup brown sugar
1 head green-leaf lettuce, washed and leaves removed from core
Ingredients for the Paalat (Sauce)
1 ½ cups water
1 ½ tablespoons soy sauce
½ cup brown sugar
4 cloves garlic, minced
2 tablespoons cornstarch diluted in ¼ cup water
Instructions for the Paalat:
Heat water in a saucepan. Add soy sauce and sugar. Cook for 1 minute. Add the garlic. Stir. Add the diluted corn starch. Continue cooking and stirring until the sauce is thick. Remove from heat and transfer into a small bowl.
How to prepare 1 serving:
Place a lettuce leaf on a plate. Scoop enough amount of lumpia over the lettuce. Pour sauce over lumpia. Top with ground peanut and sautéed garlic. Enjoy.
