Ingredients:

2 pieces pork tenderloin (3 pounds total weight), cut into cubes

½ lemon, squeezed

1/3 cup soy sauce

2 tablespoons cooking oil

5 cloves garlic, minced

1/2 cup chopped onion

3 to 5 pieces bay leaves

1/3 to 1 teaspoon ground black pepper

1 small can tomato sauce, 8 ounces

1 potato, cut into cubes

1 can 15 ounces garbanzos (chickpeas), drained

½ cup raisins

½ cup red bell pepper cut into small pieces

2 tablespoons tomato catchup


Instructions:

In a bowl, marinate pork in lemon and soy sauce for at least 30 minutes. Set aside. Heat cooking pot. Put 2 tablespoons cooking oil. Sauté garlic and onion. Pour the pork with marinade. Stir very well until the pink color is gone. Drop the bay leaves. Stir. Put ground black pepper. Stir. Cover and simmer for about 20 minutes, stir occasionally. Pour tomato sauce. Stir, cover and cook for 5 to 15 minutes. Add the potato. Stir, cover and cook for another 2 to 5 minutes. Add the raisins and the chickpeas. Stir. Add the red bell pepper. Stir thoroughly. Cook for 3 to 5 minutes. Flavor with tomato catchup. Stir, cover and simmer for 3 minutes. Turn off the heat. Serve.
