Pork Sinigang

Ingredients:

8 to 9 cups water

2 pounds pork shoulder, cut in serving pieces

2 pieces Roma tomatoes, seeded and quartered

1 piece small onion, sliced

1 packet 1.41 ounces Knorr sinigang tamarind soup mix

1 small radish sliced

1 eggplant sliced

10 to 15 pieces frozen okra

4 pieces Serrano green pepper

1 bunch of kangkong (Chinese watercress or Ong Choy) thoroughly washed and cleaned

Patis (fish sauce) to taste (optional)

Instructions:

Boil the water in a cooking pot. Add the pork. Bring to a boil. Remove the scum. Add the tomato and onion. Cover, boil and simmer for 40 minutes or until the pork is tender. Add the sinigang mix. Stir. Add the radish and cook for 3 minutes. Add the eggplant, kangkong stalks, and then cook for 1 minute. Add green pepper then cook for another 1 minute. Add the okra and cook for 1 minute. Add the kangkong leaves and cook for 2 minutes. Cover. Add patis to taste, if desired, then turn off the heat. Serve hot and enjoy!.
