Sopas (Chicken Macaroni Soup)

Ingredients:

3 tablespoons olive oil

6 cloves garlic, minced

1 cup chopped onion

2 cups cut-in-cubes rotisserie chicken breast

2 to 3 tablespoons patis (fish sauce)

1 cup cut-in-strips carrots

1 can 4.6-ounces Vienna sausage, sliced

3 cans 14.5-ounces each can, low sodium chicken broth (Swanson brand)

2 cups water

1 cup small elbow macaroni

Salt and pepper to taste (optional)

Milk (optional)

Instructions:

Heat a deep cooking pot. Add cooking oil and sauté garlic until light brown. Add onion and sauté until soft. Put in the chicken and stir-fry for 1 minute. Add patis (fish sauce). Stir in the carrots. Stir in the Vienna sausage. Pour in the chicken broth. Add water. Let boil, then drop in the macaroni. Boil and simmer for 10 minutes stirring occasionally until the macaroni noodles are medium soft to the bite. Turn off the heat. Serve hot. You may add desired amount of milk into each serving. Enjoy.
