Sweet and Sour Fish
Ingredients:
Sweet and sour sauce*
¼ cup cut-in-strips ginger
2 cloves garlic, sliced
½ cup sliced onion
½ cup cut-in-strips carrot
½ cup sliced red bell pepper
1 1/2 pound fish, fried
Instructions:
Cook the sweet and sour sauce* then set aside. Heat a pan. Put oil and fry ginger until light brown. Add and sauté garlic and onion for 1 minute. Add carrot and continue sauteing for 1 minute. Add the red bell pepper and stir fry for 1 minute. Pour in the sweet and sour sauce and combine all the ingredients. Put the fried fish into the pan. Blanch both sides of the fish with the sauce mixture. Simmer for 2 minutes. Transfer to a big plate. Serve.
*Sweet and sour sauce
Ingredients:
½ cup vinegar
½ cup sugar
½ teaspoon salt
1 cup water
4 teaspoons cornstarch dissolved in 2 tablespoons water
3 tablespoons tomato catchup
Instructions:
In a saucepan, mix vinegar, sugar, salt, and water. Stir in the dissolved cornstarch. Add tomato catsup then whisk thoroughly. Heat the saucepan. Simmer mixture over medium low heat. Stir continuously until the sauce is thick. Turn off the heat. Set aside.
